The Aroma of Autumn

So today I'm sharing the Pumpkin Bread recipe I've been making for years, typically only during the autumn months when pumpkin is in season. Since the recipe makes two loaves, we always have one for the family and another to share!


Pumpkin Bread

3 1/3 cups flour
2 tsp. baking soda
1 tsp. salt
2 1/2 cups sugar
1 tsp. cinnamon

Sift these ingredients together. Make a well in the middle for the following:

1 cup vegetable oil
4 eggs, beaten
2/3 cup water
1 can of pumpkin (2 cups)
1/2 cup cinnamon chips (optional)

Mix until smooth and split batter evenly between two greased loaf pans. Sprinkle granulated (or brown) sugar over the batter for a bakery-top crust. Bake at 350 degrees for 55 minutes; give it the knife test to make sure it is baked all the way through. EnJOY alone or with cream cheese.
